My local butcher has Oxtail on offer. I have some in the freezer but I was wondering if anyone could shed some light on canning it?

I'm inclined to treat it as short ribs. The only concern I have is the bone.

I can't say I've ever tried eating it before, but am willing to try just about anything. Canning meat is pretty straight foward, but I'm not sure about the bones either. Try PMing danilgrl and see what she thinks. I'd be inclined to just go ahead and can some as a test. Be aware though, I'm still relatively new to canning and am far from an expert here. At least I haven't poisoned myself yet!

Brent, you are missing a rare delight. Oxtail is full of flavour and when cooked in the crockpot is fall apart tender. You have to try it! It's a great winter favourite in my house.
 
i haven't canned any type of meat yet.but i do agree with brent.ask danilgrl..im thinking that the meat gets canned with-out the bone.

Oxtail is popular here in many cultures (not so much from the ox anymore) it's beef tail today and it is good, you can buy can stew here made with oxtail (beef tail) Heinz makes an oxtail soup and it's good but not as good as homemade ;)
