I can't say I've ever tried eating it before, but am willing to try just about anything. Canning meat is pretty straight foward, but I'm not sure about the bones either. Try PMing danilgrl and see what she thinks. I'd be inclined to just go ahead and can some as a test. Be aware though, I'm still relatively new to canning and am far from an expert here. At least I haven't poisoned myself yet!My local butcher has Oxtail on offer. I have some in the freezer but I was wondering if anyone could shed some light on canning it?
I'm inclined to treat it as short ribs. The only concern I have is the bone.

If I'm ever lucky enough to travel again I'll look you up for a cup!Brent, you are missing a rare delight. Oxtail is full of flavour and when cooked in the crockpot is fall apart tender. You have to try it! It's a great winter favourite in my house.
