My homemade compost has thrown up about 20 butternut squash seedlings- I know its them because its something we eat regularly. However they were supermarket-bought.
I'm wondering if they will grow true- don't mind what they look like, but will they be edible? I've grown supermarket garlic and potatoes with success but just wondering what your thoughts are on this. I have a large raised bed free if it's worth it.

Depends if the store bought where hybrids.

Garlic and potatoes are clones.

Only way to say for sure is to grow them out and see how they do. I wouldn't keep seed from them, but this years harvest might be fine

Agree, worth a try. We had a huge crop of butternut last year, and I still have a few in the basement that are good. This year, though, squash bugs have taken down good looking huge plants overnight.
I take any volunteer plants I can get. We have 5 good sized tomato plants growing in our manure pile right now.

Got a pic? I'm amazed they weren't nuked. If memory serves the creamy-ish ones are hybrid and the bright yellow are pure strain. I say go for it! I love them grilled with garlic butter and white pepper.

I got a recipe:
Save the seed since volunteers seem to be hardy. you can plant them or roast them like pumpkin seeds with some salt, lime and chili powder.

Boil the flesh until done and drain.
for every cup of squash, add 1/4 cup of onion.
for every cup of squash, add 1 cup of potato flakes.
add 1 egg for every 2 cups of squash.
Mix well and using a buttered iron skillet, start dropping mixing spoon sized patties into your grease.
Lightly dust with flour or corn meal.
Makes a good side for chicken, pork or groundhog.

There is a variation with no onion or potatoes.
use maple syrup, serve for breakfast.

a few more:
Take your favorite carrot cake recipe and exchange the carrots for squash.
it won't rise as well, but it has a unique, almost nutty flavor.

4 cups of sliced squash
1 cup of onion.
mix in 3 beaten eggs an 1 cup of meal.
pour into hot grease and stir fry until browned.

Place a layer of thin sliced squash in a baking pan.
Sprinkle in brown sugar and cinnamon.
Bake at 240 degrees for about half an hour or until medium limp.

Thank you for that @Magus must put up some of my recipes also. Now when you say 'meal' can you clarify? 'meal' in this house means chicken feed! Might make that cinnamon squash recipe tonight, bought one yesterday, mine are nowhere near ready yet.

Ahh. Here it is either ground white or yellow corn flour. :)

I have one for squash Ice cream as well, but I can't post it in good conscience as it involves raw eggs.
