a while back I canned 24 pints of meatloaf and they were so good.when canning meatloaf always use wide mouth pints as it will serve 2 people just fine
I have done the boil method of canning ground beef. Reminded me of dog food. Not impressed, but i can precook it and its fine canned up with no liquid. I wasn't too impressed with ham loaf either but using it in breakfast burritos is tolerable.I made it once and it kinda smelled like dog food.
Tasted meh! Gravy helped.
Family wouldn't touch it.
Dogs loved it.
I put it in raw and let it cook in the canner.Do you put the mix in raw, or do you fully cook it before canning?
Its cold outside and I want to help heat up the house so decided to take the plung. Using roughly 11 lbs of ground beef from last yearling made up 19 pints and 3 quarts. Hunny can probably eat just about a pint at a time so this will make a good portion of him at dinner. I've precooked meat patties and canned with gravy and also precooked meatloaf patties in a tomato type sauce, but never raw like this. We will see how the texture turns out. I did use my normal meatloaf recipe but instead of added milk, I used ketchup instead.
I have a 48lb turkey to grind up ove Christmas break so I may try this. Thanks Old Coot!!This en here be very similar ta the on Marlas posted. We use ground turkey when it be on sale cause ground beef be mighty expensive now. Also, I use oatmeal stead a crackers, just like the way it all pulls tagether better. So here it be:
Canned Turkey Meatloaf
17 pints
12 pounds ground turkey
4 1/2 tsp garlic powder
3 1/2 tsp onion powder
2 1/2 tsp paprika
1 1/4 tsp black pepper
3 1/2 teaspon mortons natures seasons
12 eggs
1 3/4 c ketchup
3 1/3 c oatmeal
Mix well.
1 1/2 inch head space
75 min @ 10 lbs pressure. This gonna change fer yalls altitude.

The disclaimer: This here recipe got oatmeal as a binder an some eggs. The food gods don't give that a thumbs up. Yall can this at yer own risk. Me, I really enjoy meatloaf!

I don't think a 48 would fit in the oven.

I can half pints of ends and pieces. I use them when we are having baked potatoes or scrambling up eggs or anything else you may want small pieces of bacon for. Potatoes soup is a good one too.
I break my turkey down like I do chicken. I have bags of legs, wings, thighs, breast, and carcass in the freezer.He'd fit in the oven if I had a pan that big. I'm going to thaw him out and grind him for hubby. He loves ground turkey. I'll take a picture when I pull him out of the freezer.
