We like light breakfast so we started using what we could from garden in them
We used Zuccinni , Squash, cukes always onions, and the best is the turnips. Turnips and eggs taste really good together. I found this out when veggies were so high and turnips were the cheapest veg in the store.

Nobody likes a wet omelette so we always cooked in just enough water to get done so easy to get steam cooked out of veggies. Then pour in olive oil or whatever and add butter saute then add eggs.

I have lots of turnips ready for harvest now so I will cut them up and freeze them till ready to use. Sometimes I'd put in hot sauce too. But not so much it covers up the turnip flavor.
I may try some cut potatoes too. I bet they would be good steamed then fried add butter and pour in eggs. Fast,simple and easy.
 
I make an egg white omelet for my husband every morning. He likes onions, cheese (mandatory), and then what ever else I find in the fridge...meat, sausage, chopped tomatoes. Likes sliced avocado on top when we have it.
Sounds good! I enjoy a SW flare, too with onions, jalapeno and bacon. I use the whole egg though. Researchers are finding out that they aren't as bad as they first thought.
 
I don't think whole egg is bad, either, but husband seems to think he's dieting with an egg white omelet. I think it's more to do with what is in it for the diet! Drives me crazy, too, egg whites at the store in the container are pricey. Our chickens lay a dozen eggs a day, and we get about 6 big turkey eggs a week. Ha. He eats regular eggs on the weekend. LOL :) In rebuttal, no husband has ever succeeded in getting his wife to do something she didn't want to do :p It's should always be a partnership.

But Dademoss, in every partnership, there is a Senior partner, and they know who it is. :thumbs up: :dunno:
