Still too warm for me to want to bake anything. At Christmas, I make Banana Fruitcake which is basically banana bread with citron added and an orange glaze. Usually make 30 - 40 of various sizes, all in one day. At least this year, I have freezers!

I also make Maple white chocolate chip pecan cookies and sometimes shortbread cookies.
 
Just to be clear, I meant that each pie should contain the 50/50 mix of apples. Not necessary obviously, just my preference.


The reason is that the green apples have more structure after baking, and the tartness gives the pie more flavor. The other apples are sweeter for balance and let loose more juice and can get mushy (apple saucy) if you accidentally over bake the pie a little. Too much juice from the baking will wreak havoc with the thickening aspect. I usually use more thickener than most recipes call for and 1/2 lemon juiced per pie.

That being said, we all know that runny pies and jams can rescued by calling them ice-cream toppings.

I have about two more weeks of being stupid busy with the second job (which is seasonal) then it's time to get the bread machine out, and start baking. Well, it's as close to baking as I will ever get. There are a few new recipes I want to try, and some old tried and true I want to freeze for later use. Does anybody have any good bread recipes for the holidays?

Do you have a small dutch oven? I like to cook all my bread in that.
the beer bread I'm making now is easy
3 c flour
1 pkg yeast
2 tsp kosher salt
1 tbsp olive oil
1 can beer

Mix all ingredients together (no need to proof yeast)
You can let rise once, then punch down and rise again.
Meanwhile heat dutch oven in the oven at 450 deg
form into a ball and put it in a preheated dutch oven
Bake at 450 for 30 mins - then remove the cover and bake for about 15 more mins.

Yall are driving me crazy. :confused2:

Cooking baking medicinal herbs are are all in The Princess's wheelhouse but she is still about 3 weeks away from submitting her retirement letter.

I will just have to drool and wait until I can get her to follow up on these great sounding ideas.

...opinions on what are the best pie apples?????

Jonagold and/or McIntosh.. (imo.. :) Just did some Banana Bread recently, and shortbread cookies, but.. My Son is who's 'killin it', right now with his Sourdough boules 'mini-biz', up North...

Corn Bread w/ Cranberries (use quazi-dried to keep the moisture down..) w/ Honey-butter is also a Fam 'staple'.. Anytime I make our 'Cinna-Pork Chili', DIY Corn Bread is a Must.. 👍

I love adding different things to cornbread! It can handle sweet or spicy add ins!!
