Egg Fried Rice- 4 portions

2 large eggs
1/2 teaspoon of salt
2 Tablespoons of Peanut or Canola oil
1/2 cup of sliced mushrooms(personal choice)
2 large Scallions finely chopped
1/4 cup of carrots cut into 1/4 inch diced
2 ounces of meat(ham, beef, chicken etc)cut to 1/4 inch diced
1 cup of Asparagus, cut to 1 inch(blanched)
3 1/2 cups of long or medium grain rice(cooked already cold)
2 teaspoons of soy sauce or low sodium soy sauce.
1/2 teaspoon sesame oil.
Cilantro for garnish

!. Make a thin omelet.
Heat a pan preferably non stick and crack 2 eggs into it.
Use soy sauce instead of salt and pepper.
As eggs get close to done, spread them out into thin layer.
When done slide onto cutting board and allow them to cool before slicing into pieces.
Heat skillet, pan or wok(I have skillet that looks like wok), slice mushrooms(if you don't use stems place in freezer bags to be used in vegetable stock later).Cut carrots on long bias, prepare other ingredients(Stir fry is quick cooking method, better to have all ingredients prepped before start cooking).
When pan is hot add oil, it will smoke a bit if hot enough.
Cook mushrooms and carrots first(they take the longest to cook).
Next add meat,green onions, add precooked rice.
When rice is hot add egg and asparagus which just need to be reheated as they are already cooked.
When everything hot, cooked add sesame oil for added flavor.

I think that fried rice is a good thing to make if a person is struggling financially. You can change up or use what you have to make it. I learned to make it many years ago, but haven't made it in decades. I think that leftover ham for the meat is a good flavor enhancer.
