So because of that we are also can and freeze most of our vegetables.we have a generator.and i am a fairly good woodworker.no expert or nothing. but enjoy building things for my wife (plus it keeps her very happy)we have chickens( 6 confined in a moveable house that me and the wife built) and use the chickens for eggs for our family and friends.also love small game hunting and hunt deer. We live in about ten acres (mostly wooded)trying to clear some off by hand.(not fun).but ur site has a lot of useful info.and we may share some pics of some of our projects we have done.(if i can figure out the uploading picture thing).anyhow just introducing myself and saying hi to all!

Oh yeah. If you create a new post or reply to a post, you'll see a picture icon in the window that you type in. I noticed you're using Tapatalk. Mine is on the bottom, next to the camera icon. That will load pictures for ya.

Welcome from another Texan. Sounds like you have a good start already and with your lifestyle you will see your food stock pile increase in no time with all your gardening and hunting. Just an FYI game meats can up just as well as the others. Since it sounds like the root cellar is an option down the road, you may want to look into doing some potted meats. I really envy people who have that option just not feesible when you are at sea level. . . The next one I am really wanting to try is Sugar Curing a pot roast to as how well it cures up. That maybe an additional way us southerner can preserve meat but I am waiting till it cools down some before attempting that one.

I love potted meats (but the salt dont like me) and sugar curing sounds really good .i love sugar cured ham but i have never done potted meats or sugar curing .we usually just freeze any wild game we harvest .
