I finally got one of these Instant Pots a few weeks ago. At Costco. I've used it three times thus far, and been really impressed with the results every time.

First time: Beef Stroganoff. Second time: Tuscan Shrimp (kind of like Shrimp Alfredo with spinach and sun dried tomatoes). Third time: Spaghetti w/meat sauce. These were all delicious recipes that I will certainly make again. I really like that you do everything in one pot - from browning meat, to sauteing onions, to cooking everything else, and then keeping it all warm for an extended time after cooking.

It was on sale for $64 when I picked it up. It's a keeper!

I love mine- roasts in under an hour, proofs bread, and makes great soups, stews and chili in a relatively short period of time.
