8 ounces of full fat cream cheese.
Let soften fully at room temperature.
2 pounds of powered sugar
Adds sweetness and helps bind together.
1 table spoon of unsalted butter adds richness and softer texture.
Pure Vanilla Extract
This enhances the flavor of the peppermint. and adds just enough to add warmth.
Peppermint extract be sure to add peppermint instead mint extract or spearmint.
Otherwise your mints will taste like tooth paste.
Food color little goes a long way.
I use various colors.
Make dough by mixing softened cream cheese,butter, vanilla extract and peppermint extract.
Mix in pretty good size bowl.
Use hand mixer.
Gradually add powered sugar, if mixing with mixer use lower speed otherwise you will have sugar plume or storm.
Mix until throughly mixed.
Adjust if needed.
Test the mint mixture by forming a small ball with your hands. If sticky add more powdered sugar 1 tablespoon at a time.
Mint dough will be easy to work with.
Add Gel food coloring in your favorite colors.
Divide mixture into small bowls for your colors, stir until mixed well.
Otherwise you could have streaks.
Shape the mints:
Line cookie sheet with parchment paper.
Using a teaspoon or small cookie scoop portion out your mints, slightly flatten with fork.
I like to use cross hatch pattern, but that's just me.
Dry:
Allow mints to dry and set at room temperature for at least two hours.
Store in airtight containers.
 
My Mother in law bought those mints & peanut for months, before our wedding & stored them until the wedding.
