I just read about this and started a jar of tops. Should get it filled tomorrow (with the last of strawberry harvest in this area for the year :(

Instead of throwing away the tops of the strawberries when you "cap" them, wash them and then packed them tight in a clean jar with a good lid.

Once packed full, slowly add white vinegar to the very top.
Seal and keep in the fridge for 2-4 weeks.

After that, strain the vinegar into another clean jar and keep in the fridge for strawberry flavored salad dressings and vinaigrette in the winter

Its supposed to be a pretty pink color.
Can't wait to see if this works because next year I'll be making a quart jar
