I just read about this and started a jar of tops. Should get it filled tomorrow (with the last of strawberry harvest in this area for the year

Instead of throwing away the tops of the strawberries when you "cap" them, wash them and then packed them tight in a clean jar with a good lid.
Once packed full, slowly add white vinegar to the very top.
Seal and keep in the fridge for 2-4 weeks.
After that, strain the vinegar into another clean jar and keep in the fridge for strawberry flavored salad dressings and vinaigrette in the winter
Its supposed to be a pretty pink color.
Can't wait to see if this works because next year I'll be making a quart jar
