Look behind you in that dark corner.
What to do with those last few hangers on before the frost wrecks them.

8-10 decent sized tomatoes, washed and quartered.
Simmer for 45 minutes in plain tomato or Spicy V8 Juice. (use plain tomato if you're going to add sugar. YUK)
If you went sweet, you're done, if not, red on, it gets better!
Add 1/4 of an onion, finely blended and a pinch of garlic.. (for the non sweet.)
A dash of red pepper.

In a 2"X1'X 14" pan or something close, pour a bed of plain corn bread mix, if you went sweet, add sugar.
Add the tomatoes.
cover in a layer of corn bread batter.
Bake until golden brown and serve garnished with your favorite shredded cheese.
Serve with chicken parmesan and pasta, fried mushrooms are good too.


Stove top method.
Using your tomato filling, add cornbread mix until it's thick enough to stand a spoon,
make fritters in bacon grease, dust heavily with shredded mozzarella cheese and serve with a spicy marinara
or spaghetti sauce as TV snacks.
 
Try this.
4 cups of mashed potatoes over a corn bread pie crust,
lightly dust with shredded onion, medium peppers and bacon.
cover with sliced American cheese and a layer of corn bread batter.
bake it brown.

This is what happens when I try to make Shephard's pie and discover
half the ingredients got left in my buddy's truck!
