A good cheap meal

Vegetable Chowder

4 Tablespoons of butter
1 onion diced
1 green pepper diced
1 Teaspoon of salt
1/4 Teaspoon of pepper
1-1/2 cups diced green beans (1 inch pieces)
1-1/2 cups diced carrots
1 cup of diced potatoes
3 cups of water
1 can of evaporated milk

Sauté the onion, green pepper and seasonings in butter until lightly browned
Add the vegetables and water.
Cook until vegetables are tender (about 15 mins)
Add the evaporated milk and heat until heated through.
Makes 6 servings

*My Notes*
I use bacon grease instead of butter
I use canned vegetables and drain them well and then cook them until they're heated up and then add the milk.
I have added about 4 tablespoons of flour to the bacon fat and sautéd vegetables to make a rue when I want a thicker soup/chowder.
I've also added some instant potato flakes to thicken it before instead of the flour
 
Sounds good.
I would add garlic & mushrooms, chopped back olives, ginger, black eye peas.
Sprinkled with bacon bits & shredded cheese just before eating.
