Here in the North of the Southern hemisphere it's HOT and wet hence the reason why our summers are called the Wet Season.

Some die hards sit down to the Australian traditional roasted meal with all the sides and others sit down to a
mixed table of cold salads, sides, cold seafoods, cold cuts, legs ham and they keep the hot foods to a few side dishes.

This year because of my stomach and having to watch my diet I can't eat as much as I want and what I want.
I normally put a leg of lamb in the slow cooker along with root veggies, have a big bacon and egg breakfast and then graze on seafood until the lamb is done.

This year I can't.

So I'm thinking I'll go for a single slice of avocado toast with vegemite, avocado and chopped tomato for breakfast.

2 sandwiches for lunch -
Sand crab and kewpie mayo on the softest, fluffiest white bread I can find.
prawns and kewpie mayo.

I want to roast some fresh salmon tilll medium rare with a few scallops and fresh asparagas with lemon juice, capers and dill.

I'm not sure if I'll be able to fit all this in but I'll try.

What are you having for Christmas dinner?

Seafood for Christmas sounds wonderful.
I gotta ask what is Vegimite? I've heard the term, but have no clue.
No idea what we'll be having. We're off to the inlaws.

Vegimite is made from yeast and it's extremely high in B vitamins and folate.
It's a sandwich spread that is used sparingly and is a staple for kids here in Australia.
You're fed it on toast fingers that we dunked into soft boiled eggs, put into crackers with butter.
Put onto sandwiches with cheese for school lunches.
It's salty and tang like a soy sauce.
It works extremely well with avocado and tomato.
 
I'm with Pearl here, probably gonna go with ham for Christmas, since I've already had two turkeys this holiday season... well, I'm still working on the pot of homemade soup from the last bird, it's good but I don't think I wanna do three turkeys over the holidays, lol. Two good-sized birds are enough, so ham it is! I like those spiral-cut, honey-glazed hams, or the ones with brown sugar, those are tasty! All the usual trimmings, of course... :D

Bushel of steamed oysters dipped in hot pepper vinegar while eating. Brussel Sprouts sauteed in bacon fat until the outside is crisp starts to burn with bacon chopped up. Hard Crab Stew (Blue Crab in a pot of potatoes, onions and dumplings cooked down). Yeast rolls.
 
Bump. 2 year-old thread but Christmas dinner will still happen.

My son texted me late last night (after I was asleep so I didn't hear it). Told me he got us some meat for Christmas and the holiday season and I needed to get it handled so it's good for Christmas day.

I went to his place this morning, opened his fridge and found:
(12) 8oz filets
20#+ roast
5# of hamburger
5# of chicken

AWESOME!!!
That said, it is over 30 pounds of meat... and there's only 5 people.
I quartered the roast into 5# packages and put everything in the freezer.

Look at the roast - it's almost as long as the dishwasher is wide. :O

I have no clue what we are doing for Christmas dinner. I don't think we have plans to go anywhere, and I don't think anybody is coming to our house. We haven't even discussed it.

I have no idea either!! If the weather is nice we want to grill steaks. We will know as it gets closer!!
 
Still got 2 weeks to decide or find out... :confused2:
 
The lady already has this worked out: Prime rib with French onion au jus, twice baked potatoes, garlic-butter sauteed green beans with bacon, brioche dinner rolls, 2 layer red velvet cake with cream cheese frosting and a bottle of 2021 Howell Mountain Cabernet Sauvignon.
And who is going to cook all that? I'm guessing you!

I am in charge of potatoes and beans. The ladies are making the cake the day before, it's a thing I guess, and the lady herself is making the prime rib & au jus and she purchased the 'ready to bake' rolls and the overpriced bottle of wine.

This meal is a tradition for them going back to when the girl was a baby.

I wasn't reading the menus as much as I was noticing all the people who are no longer with us: Tankgirl (RIP), Curmudgeon (RIP), Wingnut (hopefully doing well), and TeeJ.

May be tamales, may be Swedish meatballs, may be something else. Egg nog is classic for us. Have no idea of what else. I'll go with the flow!

Someone on here called him Wingy once. I got a good laugh from that.

Is he tired of the goat head burrs in New Mexico? It seems to me that he had many. There is a dog park that I go to that is so full of them. I go to this park every day, M-F, and chuck a ball for the Aussie, and once she is done, I rake for 15 to 30 minutes. I take a shrub rake, a sifter for a 5 gallon bucket and rake up a bunch every day. I am hoping that in two years I will have them all. Yep, that many. It seemed to me that he had that many or more as well.

Is he looking for land that would be better for gardening?
