Super-simple Topping for Hot Dogs, ie: 'Curtido Dogs':
...to top 'Pupusas' and/or 'Pasteles' (Recipes to come one of these days, whence I have a chance to Make 'em)...
..but in the meantime, Curtido is absolutely Killer in a thick Grilled Cheese sammy (just add Post-grilling / pre-serving) Zomg..
OK, enough drooling.. What you'll Need:
- 1x small Head Cabbage, shaved (into Thin 'ribbons')
- 1x Large slivered / Grated Carrot
- 1x small slivered White Onion
- 1x small slivered Bell Pepper
- 1x 16 oz bottle(s) of ACV (no need for 'Organic' or the +Mother, etc, but ACV is just less hardcore / yummier / Healthier than White Vinegar, yukk..)
- Salt, to taste (~1 tsp)
- Oregano, to taste (~ 1/2 tsp+ )
- Option for some 'kick': Thin-sliced Jalapeño Rings, with Seeds..
..Mix it all together, dump in 3 Quart Glass (or plastic) container w/ Lid, Top up with ~16 oz Water, just let it 'stew' for a few hours, or even Overnight.. Fine if 'kept on the counter', but Will keep 'fresher, longer' in the Fridge. Should look about like This when done:
Note: When you Serve this, ya wanna use a 'slotted-spoon' or a large-Fork - So-As - to drain most of the ACV from the servingful.. It's OK if the Curtido is 'damp' with ACV, but.. Ya don't want it 'dripping' / puddling ACV.. All that will do is ruin yer Grilled Cheese-bread / Hot Dog-bun..
