Dehydrated Cucumber

Yesterday after picking my cucumbers I went ahead and shredded them all which was about 12 cups. I kept out 4 cups to make quick breads and muffins dehydrating the rest. Once rehydrated they go good in dips but I am wondering if anyone has ever baked with them. They are a little on the tougher side, kinda like dehydrated onions, but would they moisten up more in a baking dish like breads or cakes? I already have canned up plenty of pickles to last a few years now so trying to come up with other ideas for their use. I'm experimenting . . .

Let me know how it turns out with dehydrated. I've done shredded in breads a couple times and it was pretty good. I'm close to betting my first tomato of the season, but my cukes are still way too small to start producing.
 
Me too on tomatoes. . . should be a couple more days and I will have two red. . . crossing fingers
 
I also throw cukes in the pan when I saute up yellow squash & zucchini. Tip given to me by Granny. Sure to s good that way.

I've never fried or sautéed them before. I'll try that this year. Damn, you just reminded me I didn't plant any yellow squash or zukes this year. I ran out of room.....
 
Squash is always one of the first things that get planted here. . . got yellow,butternut, spaghetti, and of coarse the zukes
