OK, so I was at an event over the weekend (A new Ren Fest in Central FL), and a vendor there had these, and they were AMAZING... He's a former Bern's Steakhouse chef (one of the best steak restaurants there is). Anyhoo, he has these amazing flavors he infuses into the old classic of deviled eggs.
For example, there is buffalo ranch, buffalo bleu cheese, chips and salsa, pickle, beer cheese, etc.
Basically, just mixing these flavors with the egg mixture in a food processor (I'm assuming), and using a pastry bag to fill. For example, for my favorite, the buffalo ranch, it's buffalo sauce mixed with the egg mixture, then piped into the hollow egg half. Drizzle some ranch on it (and I like him to top it with bacon crumbles)... For the chips and salsa, you mix some (non-chunky) salsa with the egg mixture, pipe in the hollow egg half, add a drizzle of hot sauce, and some garnish tortilla chip crumbles on top.
I ate a ton of these over the weekend (so it's a good thing we struck up a friendship, as it saved me a lot of money too, hehe...)
If you're in FL, his outfit is called "Wicked Chicken". I know he also has a food truck, so I'm sure our fellow Floridians will be seeing a lot more of them.
