So, first off, thanks for the suggestions for the Ball Book. Ive read the first part(basics), and I do believe it will help me understand.

Im curious about opinions for our first pressure cooker. I really do like the look and features of the All Americans.

Without knowing how we will like canning or not, should we go mid-sized ?

Are there any advantages to buying these colored models vs the all aluminum ?

Not to mention I believe a better warranty.

How do you know if it needs the gasket replaced? Can you see physical steam escaping, or wont reach temps and/or maintain pressure?
If it gets hard or cracks or looks worn, discolored or pitted. Buy an extra one when you get the canner. Presto has a replacement pack that has a gasket and over vent plug. Just be sure you’re getting the one that matches your canner model.
 
For the few bucks you are going to save on a gasketed pressure canner ,are the head aches worth it, especially when the supply chain fails (worse) Just my couple of cents.
