The three sisters, corn beans and squash. But the question was about what one thing.....i tend to see things thru a apocalyptic end of the world as we know it lens so for best winter food i would go with a good winter squash that keeps thru the winter till the spring crops come in. Hopi orange squash, spaghetti squash all do good here in our short season.
 
Potatoes.

I am making the assumption that we aren't getting much else to eat and only get to grow one veggie. Dried beans would be second choice.

If we are getting other stuff to eat but are restricted to one veggie, than I might swing for squash instead.

A kind world would let me have all three.

I am assuming that we can pick/harvest wild plants & animals, but only grow one vegetable. I go with beans because can be eaten in four stages: 1)shell are small & tender. 2) immature beans. 3)Mature green beans. 4) Mature dry beans. 5) most bean vine tips can be stir fried or boiled, as well as the young leaves.
