I know ..cedar syrup.. is a thing that can be done.. If maple syrup is a 40 to 1 boil down ratio, cedar syrup is 100 to 1, so much more work to produce.. It isn't bad tasting, but to me enough different to be an acquired taste..

I made quite a bit of Mugolio this year. Italians pour it over icecream but I like it in my coffee.

Never heard of cooking bark, but I knew you can tap black walnut & it's family.
But never tried it, because it weaken the tree & it may not bear fruit.
