1lb or so goat meat, in chunks
Carrots
Potatoes
Celery
Onions (2 medium or so)
Garlic to taste
Chopped Thai chili or another variety hot pepper, either fresh or dehydrated (optional)
Mushrooms (optional)
2/3 c gluten free flour
Butter or coconut oil, about 3tbsp
Salt
Pepper
Beef bullion (optional but helps)

Bring cast iron skillet up to medium temp with butter or oil. Roll goat meat in gluten free flour to coat thoroughly, and brown in pan until outer edges are crisp. Dump entire contents of pan into crock pot. For thicker stew also dump the extra flour in crock pot and stir. Add Carrots, potatoes, celery, onion, garlic, peppers and mushrooms. Add just enough water to almost over contents, a quart or a little more. Turn crock pot on high for 5 hours or so, do not season until it's cooked through. Stir contents after 5 hours. Then add salt and pepper to taste and 3 bullion cubes or more if you want. Cover again and cook additional hour, stirring occasionally.
I've added rosemary in the past, it's good but you want to add in fresh or dried herbs toward the end of the cooking time.
