Welcome from Kansas! Where are you looking for a homestead? Lots of great ideas on this site. Homesteads are great, but a tremendous amount of physical work. It has not gotten above 7 degrees where I live, and taking care of farm animals has not been pleasant today. Just what we have to do.

I'm looking to start a homestead. I'm tired of just surviving what's thrown at me. I need to plan and prepare more. I think a homestead would be the place to do it.

whereve the area is where you are interested always, always check the wells, and aquifers. and drought map.

Hello and welcome, you've fond a great place to be, I'm having a tough time figuring who I've just welcomed and that's a good thing. It's always good to get new prospectives on prepping, you never know, someone may have solved an issue we need help on.
 
I'm getting chickens for eggs and meat. Should I get pigs or rabbits for more protein?
If you can raise pigs, raise the pigs. But raising pigs takes a lot more of everything - more facilities, more fence, more feed, more work. The amount of meat you'll get should be worth the trade off though.

I've got no experience raising bunnies, I've only ever ate wild cotton tails, but it seems to me that there's only enough meat to barely make one meal from a bunny whereas you can eat for a long time off of one pig...
 
You are already raising chickens and raising rabbits won't supply much diversity. Raising pigs you get ham, pork chops, and... BACON!, sausage, steaks, roasts and... BACON!
