Was in Korea where I discovered kimchi. I was hooked!! Been making it for years.... This youtube video will take you through the process...hate to admit it, but Emmy's recipe is better then mine.




As a heads up, our hovel is located in a food desert....so, if you're in the same boat, you'll need to order some of the items on line. Napa cabbage should be available in most large supermarkets. Also, don't brine with table salt. It's loaded with iodine. Use Canning, Kosher, or Sea Salt
 
we buy kimchee in stores along with spicy Korean Morkovcha

Many moons and years ago, I worked in a computer manufacturing company. The company employed a large number of Asians. We had to create a special A/C progam for the cafeteria air handler. We called in the Kimchee cycle. 30 minutes before lunch, the air handler opened the outside air dampners and closed the return air dampners. The smell was so bad, we could not recycle the air. This cycle lasted until one hour after lunch.
