I have some raw cow’s milk, and I want to make whey for using in fermentation. However, I am wondering if I could skim off the cream to use for butter, or does the cream have to be there when I set it out to separate?

on the farm we milked Jersey & Guernsey cows.
Mother made butter,buttermilk, but never chesse.
I have had fresh goat chesse.
The Guernsey gave up to 5 gallons a day, the Jersey gave much less.
We never had more than four milk cows at one time.
