It sounds like we have a similar palate. I used to gag watching dear old dad smear mayo on his peanut butter and banana sandwiches. I had no idea that used to be a thing! My oddball would be grilled cheese with peanut butter and thin slices of jalapeno. another nutty one is a potted meat and egg sandwich, but my all-time favorite is baloney and salami on French toast, cut twice and dipped in tomato soup. My mother loved mashed potato and ketchup sandwiches with a slice of onion and pickles. and finally, one I myself unveiled here I call the egg Mc-F***it, two frozen waffles dipped in egg like one would french toast, a slice of cheese, and a spiced-up beef Pattie or sausage.Spam - no, disgusting.
Mock chicken sammich - no. (But I did like egg salad sammich for a while, can't eat it now).
Sloppy Joe - can't eat that either.

Something I like, and used to eat frequently in the 70s and 80s...alfalfa sprouts, romaine lettuce, nice ripe tomato, havarti or muenster cheese, and either hummus or avocado on a nice thick whole grain bread with Spike seasoning.

I make all kinds of pepper jam. Jalepeno is good but strawberry habanero is my favorite! Letting the peppers get red first is my favorite, I like the heat and the jam is a better color.I love Jalapeno preserves, especially the red jam, especially on meat. It's like a Thai restaurant moved into your mouth!
