Look behind you in that dark corner.
In a double boiler, wilt two diced green onions and two diced Jalapeno peppers in a splash of Busch Lite.
add one can of corn and melt in 1 cup of American or taco cheese.
Stir into 4 cups of potatoes, top with breadcrumbs, and bake until the top is brown and bubbly, or blast it with a blowtorch if you're in a hurry.
Alternatively, you can mix in the peppers and onion into instant mashed potatoes, add the cheese, and let sit until the cheese melts, then add the corn, stir well add the breadcrumbs, and brown. Next time I think I'll add bacon bits and use stovetop stuffing for pork before blasting it with the torch.
