Turkey Quiche

Take a pie plate and make a crust with leftover dressing.
diced turkey and shredded cheese
add your quiche mix (sour cream and eggs) about 6 eggs to a pint of sour cream though you might not need that much. Usually eggs and a reduced amount of sour cream will fill the pie pan.
Bake 350º till done.



Dressing Waffle

Crumble leftover dressing, add eggs, mix and cook in a Waffle iron. The original recipe called for covering with mashed potato and gravy. I think I’d prefer turkey and gravy. Even just gravy would work.
 
The older woman who lived in the same apartment building I did growing up would take her leftover turkey, run it through a meat grinder, then mix in chopped pickle, onion, salt, pepper and mayonnaise. Then she would serve it as little sandwiches on the leftover dinner rolls. I loved those sandwiches and will still make them every once in awhile.

She also used to make something called Turkey Tetrazzini, which was leftover turkey chopped up with pasta. I hated it, but ate it anyway.

Don't forget to use the bones or carcass if you had a whole turkey, and make bone broth with it.

My neighbor makes turkey enchiladas with leftover turkey. I don't have her recipe.

I don't know why, but in my family, we have a hard time eating leftover poultry. Sometimes we have a hard time eating it the first time. It is not just me. I have siblings and uncles who have a hard time with it. I have wondered if it has to do with us eating freshly butchered poultry for decades? The food they were fed? Or does it have to do with our blood type? No idea! My brother flat out refuses to eat leftover turkey. He cannot stand it. I will eat it, but it is not a favorite thing for me to eat. Sometimes I end up throwing part of my serving in the trash. I never buy turkey bacon or sandwich meat, but a friend of mine only eats turkey bacon, not the real thing.
 
Two turkey salads: For sandwiches or on crackers: very finely diced turkey, celery, and onion with mayo or miracle whip! I never measure amounts, just as much of each as you like!! For just eating or as a side dish, I dice turkey, celery, apples, sometimes grapes, and onion, and pecans. Add mayo or miracle whip as you like!!
