Okra...fried is fine, slimy boiled okra....YUCK!!!
Man, boiled okra with tomatoes and an onion chopped up in there is fine Southern eating.
It ranks right up there with grits, aka Georgia Ice Cream.
 
Brussel sprouts.
Always have loved them. :p
Lately, as I have gotten older, they don't love me so much anymore :(.
They give me the 'you gotta go potty, RIGHT NOW!!!' thing.
What are you cooking them in?
Prairie oysters
By this, do you mean Rocky Mountain oysters aka calf nuts? They are good if they’re cooked right. I got in trouble one time for taking some to school in my lunch and shared. I didn’t know that everyone else didn’t eat them.

Hubby would say the grossest thing I like is divinity. I do agree it’s pretty sweet- been years since I’ve had any. I might not like it anymore.
 
Once in a while I would eat raw oysters, baked also. Really grossed my LH out. I've eaten squid and octopus and thought they were okay at the time but I would never eat them again unless I was starving.
Snails, escargot, I thought they were really good too until I threw them up a couple hours later. Too rich for this poor young adult (it was many years ago).
Some people think the gizzards, heart, etc. from a turkey are really gross. I cook them up to go into the dressing for Thanksgiving.
Steamed crabs.

Just boiling Brussel sprouts in water until the outer leaves move away, put butter, salt and pepper on, that's all. Same as always.
The only thing that has changed... is me.:(

You mentioned 'mountain oysters'.

A long time ago a fellow worker in a lumberyard shared with me deep fried hog nuts that he was eating out of a brown paper bag.
It was the byproduct of the spring castration at his family’s farm in Dublin, Georgia.
They were very good!!!!!

My Son, who lives very-near the Coast up in NorCal (still trying to 'rescue him' Outta there, but.. Ehh, another thread..) has a near-limitless source of Seafood there, Free for the catching / taking - awesome Crabs, Fish of all sort, even Mussels o_O but, the Urchins are certainly at the top of the 🤢-reaction list. ;) That said..

..They're really quite tasty when Prepped Correctly.. he Did make a believer outta me. :cool: We made like a 'Ceviche', ie: https://norecipes.com/sea-urchin-ceviche-recipe/ ..and 'Salsa Negra', ie:

..with Plenty of Lime and a nice Ale to wash it down, it's Quite good. 👍 Then again, clearly, I am a Little 'touched'.. ;)

My pops used to buy something, I can't remember what he called it, but it was raw hamburger mixed with chopped onion & peppers, salt, pepper, worcestershire sauce and other stuff. He ate it with crackers or made a sandwich from it. I had some and thought it was okay, until the told me it was raw hamburger. Then I sort of lost interest.

I like liverwurst, braunschweiger, pickled herring, kipper snacks, all sorts of things my dad would eat when I was a kid and I always thought "ick". Guess I grew into it or something. I also like to mix flavors that other folks give me the side-eye on, like a liverwurst and onion sandwich made with sweet cranberry-cinnamon bread.
