First, I hope the majority of the country has permanently become disenchanted with the leftist/liberal nonsense and Texas can stay.
BUT, to answer your question,... this is my opinion
The east part. Specifically the "Big Thicket" area.
We have two harvest seasons. I wont lie, it's hot in the summertime, but hey, the comanches made it work!
Stay 100-125 miles away from the gulf though. Gives the hurricanes a chance to settle down.
Look at "Texas AgriLife" for livestock/gardening/orchards info. I am putting in orchard next year. Doing pears, plums, peaches (prob wont be as good as Georgia peaches unfortunately
), apples (yep we have apples that grow in Texas thanks to A&M's research and development dept).
Already have huge established walnut and pecan trees that dump tons on the ground yearly. Only bad thing is they attract the wild hogs. On the up side if everything goes south, I have a seemingly endless supply of wild ham on the hoof! Naturally there is whitetail everywhere
Lots of lakes, creeks and rivers for the fishing. I keep channel cats in my ponds so, I dont have to travel to get fresh fried catfish
Look into Counties like Angelina, Rusk, Nacogdoches, Houston, San Augustine, Anderson, Cherokee, Trinity. You may have to reclaim some of the land from the pine forest, but just get it timbered and use the money from the timbering to offset the cost of getting the stumps and brush mulched.
Lots of good land and far from major urban areas and not too expensive. My acreage is in Cherokee County
