I will do an ingredient list tomorrow. Already in bed. Is seitan soy or tofu? If so, I can't have it because of low thyroid.

Seitan is wheat.

o many are gluten sensitive/intolerant or on KETO diet, this wouldn't be for them. But a lot of people do fine with it. I haven't eaten seitan in a long time so not sure if it'd sit well with me. Still, it's a great way to use wheat if you're needing to stretch your food storage or save money.
How to Make Seitan

Tex Mex Veggie Burgers
Makes 8 burgers

2 15 oz cans kidney or black beans, mashed
1 15 oz can corn
1/2 cup onion and bell pepper plus 1 jalapeno plus 1 teaspoon minced garlic--all chopped and sauteed together in olive oil
2 eggs
1/2 cup salsa
1 Tablespoon ground flax seed
1 or more Tablespoons chili powder
1 Teaspoon cumin

Mix it up and form 8 patties. Fry on medium heat for about 4 minutes each side.

Edit. Also mixed in one cup of dry oats. Sorry I forgot!

2 packages taco seasoning
1 1/2 cups water
15 ounces black beans (drained)
15 1/4 ounces whole kernel corn, drained
16 ounces chili beans (mild, undrained)
10 ounces diced tomatoes with green chilies
14 1/2 ounces stewed tomatoes
1/2 cup chopped onion

Kinda like chili with corn and taco seasoning instead of chili powder.

I make it, we have it for supper, then the rest gets jarred and frozen for later meals.
Will have to try.
When update pantry cabinet for pantry and freezer challenge found 8 cans of black beans,12 cans of garbonzo beans, had no clue what to do with them.
Thanks to you and Snappy1 will be trying taco soup and hummus.

crab cakes, buttered noodles and pickled beets
I'm jealous! Enjoy your crabby patty. I used to eat soft shell crab sammiches. We'd sit down at the local pub and do all-you-can-eat-crabs. We had crabs for summer family get-togethers.
Is this your own recipe or frozen c. cakes from the store?

I get them at a restaurant supply company. I figure if restaurants feed them to you why not buy my own. They're good too
 
I bought a big "family pack" of chicken legs a while back so I'm thawing those out now. There are 14 legs in the pack so I plan on doing 7 with bbq sauce and 7 in an herb and garlic flavor. I want to use the garlic and herb ones in a potpie later

To go with the bbq chicken I'm making mac and cheese and steamed broccoli today
 
I'm likely going to have stroganoff again. Already made some sort of brown rice w/ chicken broth for Mom. I don't care for the rice stuff she gets-- it has some weird seasonings in it. Also had kale salad. It has dried cranberries, bean sprouts & some kind of seeds & the dressing is good. I found some ricotta cheese for the hamburger helper lasagna. I made it before but it was missing something- needs more cheese.
 
I'm curious about the fasting- some religious observance or is it for medical?

We have fasted in faith, but right now we are fasting for autophagy and hormone control. Sort of an internal house cleaning for dead and damaged cells with the side benefit of increased HGH and enhanced hormone regulation. Not to mention the first hand confirmation that what the medical community, government, diet industry, etc. says about nutrition/fasting is pretty much all wrong. There is also a survival benefit to knowing how long you can go without eating with no negative side effects.

72 hours this week and 72 hours next week. We are going to do at least one 7 day fast in April as well.

There are several things you can do with garbanzo beans. Sometimes, I rinse them off and add them to salad or soup. Hummus is classically made from garbanzos, but hummus can be made from white beans as well. Hummus recipes are found all over the web, but has olive oil, tahini (sesame seed paste, similar to peanut butter), garlic and a little salt. Hummus can be eaten with pita bread, pita chips, corn chips, veggies (crudite, vegetables like carrots, celery, cucumber pieces eaten fresh).

I add black beans to chili or soup instead of other kinds of beans. I do rinse them well before I add them, but I do that with all canned beans. Sometimes when I made chili, I'll add one can of black beans, one of corn, one of another kind of bean. You can also make a bean dip with black beans with some lime and cilantro.
