Planning on all-beef sausage dogs with onions, bell peppers, mushrooms, and Swiss cheese, along with mashed potatoes/sausage gravy, cottage cheese, and likely Apricot cobbler topped with French Vanilla ice cream. And, naturally, the ever-present pot of coffee!

What is tostones?
Tostones is a dish cooked in Puerto Rico and Cuba and maybe other Carribean locations . They are twice cooked plantains. The plantains are sliced, fried, then smashed flat and fried again. They are salted and seasoned a little. You can eat them by dipping them in a little dressing, such as an Italian dressing. I had them when I was in Puerto Rico a number of years ago.

A man has a pop up restaurant location in my area. He comes from a family of restauranters, and is a chef. He caters and is in process of starting a Cuban restaurant. A pop-up is a place that is not there every day, just when someone is able to. Usually the food is to go. He does pop-ups in a location that is probably where he does the cooking for his catering. He announces what he is prepared to cook for the day, the hours, and then you go get your food to go. He has been doing this for quite a while, and this was the first time I decided to go. He often does Cuban food, but also does other ethnic foods.
