Making chicken fajitas tonight!

Made my chocolate covered cherry cake. Nope. Didn't turn out right. 1 inch cake, 1 inch Jello. So I need to use 1 box of "double" mix per layer. 1 small box Jello. Didn't take a picture as putting stuff on the web can prove dangerous. Some culinary union might try to have me arrested. After getting my piece on a plate found it better to use a spoon. Using a fork was like trying to drive a herd of cats. I might make another, different flavor, cake. Even after all the cussing, moping and sponging It did taste ok.

I had smoked sausage and veggies with pasta noodles last night so chicken something to night. Was going to have chicken something Sunday night but that's my spaghetti night, will have it tonight. I think I found Heaven! I have a little left over frosting from the cake, 3 cans, so I put some in my coffee. There really are rainbows and butterflies!

Have a roast in the crockpot. Also broccoli, some fresh fruit, and either a homemade mac cheese or tater tots, or maybe both. We'll see.

Probably just a sandwich tonight. It was a 9 hour round trip to the grocery store and we're both beat.

Yesterday I used some rotisserie chicken and made chicken and veggie stir fry.

Today I'm making homemade pizza.
Pepperoni, sweet peppers and black olives and 2 cheeses

My local grocery store make their own pizza dough and had it on sale so I bought some so I didn't have to make any

Hamburger vegetable soup. I call in grandma's soup, because my husband's grandma (when she was living and we were first married) would come visit and stay with us a week and it would always be the first dinner I'd make for her and she would love it. Bran muffins to go with it.

Questions about frying reminded me I had a large pkg of whole wings I needed to process. About 13-15 whole wings come in a pkg. I cut them up and use my food saver to vacuum seal 5 pieces per pint bag. Anytime I want wings for dinner I grab a bag from the freezer and toss in the sink with water to thaw.

Today I had 26 wingettes/pieces, 4 pints for the freezer and 6 pieces to cook for dinner. I steam them for 8min. This cooks out the fat and they are almost done… The skin and meat will start to pull back and I can see the bones on the ends.

It takes 11 min for the oil in my pot to come up to about 375f. And it takes about 11 min for the steam cycle to complete. Usually they go right from the steamer into the fryer. I only fry them about 3 min or until they start to float, then they are done.

Nice crispy wings for dinner… no batter needed… and my favorite bbq sauce, a mustard and vinegar based sauce I get from a bbq place in town (I despise sweet sauces). I buy a gallon of sauce at the time and keep a vodka bottle of sauce on my kitchen counter (doesn’t need refrigeration).

Add some celery sticks, a little ranch dressing and have a salad or veggie on the side... Yummy!!!

Youngest had a hot sandwich, sausage and cheese (on homemade bread). I have sausage and lentils simmering on the stove.

Tonight I tried-out one of my recently purchased preps, in a can, from the Chef... Boyardee.

Spaghetti & Meatballs. When all jazzed-up with spices & herbs it's actually alright. They're still on sale $1 a can. Gotta get more tomorrow.

Take your favorite cornbread recipe and add 1/4 cup of caramelized onion, 2 cups of cubed and boiled zucchini, and 1/4 cup of drained and rinsed small curd cottage cheese. Mix and bake as usual.
