This yearbi started dabbling in lacto fermentation.

I fermented some green cherry tomatoes recently. I made a solution of 2 tablespoons salt to one quart water. I layered dill and maters, onion and dill and repeat. Sprinkled a bit of cayenne pepper. Covered with the salt solution. Kept it all held down with a zilock bag. Learned right away to use a double bag..lol...
After 2 weeks started eating

I heard a great idea this past week. Get a piece of plastic canvas, cut the size of your vessel, set weight on top (like a jar of water).
