Probably the best way to insure fresh cheese long term is a goat or a cow and making your own cheese. You need to purchase enzymes to make different types. If you are not already doing that, it is not likely to happen. Think of Heidi, living with her grandfather, living on the side of a mountain!

Is there any other domestic animal where you can get milk and make cheese from it?
Buffalo is another good one.
 
Commonly, cheeses are made by using the milk of:

  • cow,
  • goat,
  • sheep,
  • buffalo,
  • ewe,
  • or their blends.
However, the list doesn’t stop there. There are cheeses made from:
yak milk (in Tibetan communities),
  • horse milk (in Central Asia),
  • camel milk (in Ethiopia, Mauritania, Sudan and Bedouin communities),
  • deer milk (in Sami communities in Finland and New Zealand),
  • alpaca and llama milk (in Andean communities in South American),
  • donkey milk (in Serbia).
  • and even pig milk (attempted by Brooklyn chef Edward Lee and Dutch farmer).

You mean water Buffalo, not bison?
Beefalo is a meat cattle, can you milk them?
Yes water buffalo. As for beef cattle, I have milked before just because momma would t nurse the calf. The part beef/par milk cow I milk and will get a fair amount.
