I figure Ramen is a grain so I add half a can of beans per package, for a complete protein, and half a flavor packet to cut back on the salt.

I use Banza (chickpea/garbanzo) pasta. Use dried, powdered cheese that I get from Amazon to make mac & cheese.
I have used Banza as well when cooking gluten free. Other major pasta makers are also making their own gluten free versions as well.
 
Tonight I had Ramen Noodles for dinner, mixed with Campbell's Broccoli Cheese soup.

It was good, and I figure it was nutritious enough. But.... after reading the ingredients - I could have done better.
 
if you want to try something real different with a much 'stronger' taste....get some ...soba noodles....anyhow they are thin buckwheat noodles....very different.

I prefer udon to soba.

Same here, Have had some Udon / Hibachi'd Veg + Chicken bowls in past that were To Die For.. 😍😍😍
