I've read journals by folks starting cattle herds after the civil war. Almost all the young men went off to the war. Nobody was left to tend the cattle.

Parts of east TX became over run with wild long horns. Especially around Big Thicket TX. By wild I mean, they have horns and knew how to use them. They were just as aggressive as wild buffalo. They would kill or maim in a blink.

You can barely see it in the pic... Black on Black eyes. That's the first thing I notice about a cow. It usually means they are unpredictable and very dangerous.
 
When my brother was working at a restaurant in the casino they were told they had to label the contents of all of the containers. There were some empty ones he labeled as "dehydrated water". Before the labeling he pranked a new worker by sending him to look for "dehydrated water" in the pantry. Best part was, one of the supervisors was too stupid to get the joke and spent 30min helping the newbie look for it. They never caught on.
 
There is that term again: chow-chow. I've never eaten any, never been around any, and wouldn't know what to do with it if I was.

I equate it as a cross between salsa and pickle relish w/out tomatoes... I like it, always keep some in the house.

First jar I get from a friend, he and his wife make 2 or 3 gallons at a time for family and friends, best chow chow I've had... the next two - a commercial product with an ingredient list.

We have bison between me and the homestead that started the whiskey rebellion.

I have bodacious plans in the event of an EMP to walk to the back gate, cut the lock, and set them free. They would be fish in a barrel for hungry hoards in small number. Set free to multiply, they could be a food resource to those that remain and rebuild....

Do you have good fencing around your property? They love to roam and little stops them. They can be dangerous.
 
It's a desiccated jack rabbit I found lying on the ground so I propped it up against some dry vegetation for a photo. Not sure how it came to be dead, not eaten but sometimes there's a rabbit die-off around here and the coyotes don't eat them, probably because it happens at peak rabbit population and there are plenty of live ones.
