What is a ramp ?? A glorious, awful looking green plant that when fried up with a sliced sweet onion smothered over a grilled steak gives you a wonderful onion garlic taste..

I am always afraid to pick wild things like that in case I pick the wrong thing and poison us...took me a few years to trust eating wineberries here LOL
( and I don't eat any sort of fungus, despite a lot growing here)
Mentor.... Find yourself a good mentor to go with a time or 2 to the bush to identify wild edibles... It has been too long ago now for me in this area.. I also would need a refresher to be able to ID things.. Check your local community for classes, field trips, county extension office, master gardeners and the like for resources..

back in the fall i pulled some very young ones up i am growing to see how they looked. these are either one or two years old...they are very tiny...it takes about 7 years from seed to harvest.

ramp pasta:
Nip the tops off two growing ramps, and leave one leaf each so they continue to grow.
Using your kitchen scissors, snip them into fine pieces and place to one side.
Boil up three cups of egg noodles Al'Dente. (still firm) Rinse and fluff.
Lightly wilt the ramps in two tablespoons of butter.
Using 1/2 a cup of white cheddar and 1/3 cup of water, melt the cheddar, add 1/4 cup of cream,
1 can of mushroom chunks well-drained,1 tablespoon of Italian herbs, 1/4 tablespoon of black pepper, and the buttery ramps. mix thoroughly with the pasta and bake in a Pyrex dish for ten minutes.
Ground-cooked hamburger meat can be added for an even better meal.

Ramp fried noodles.
the leaves and bulbs of two ramps finely diced.
boil, rinse, and drain two packs of ramen.
put approximately 1/2 of your ramps in sesame oil in a nonstick skillet or iron Wok.
beat three eggs, pour half of it into the ramp grease, and stir until half done.
immediately add the ramen and the remainder of the eggs, stir, and add the remainder of the ramps, and two finely diced chili peppers and toss until done.

Wilted greens.
fry 5 pieces of bacon crisp. save the grease!
Chop up 1 cup of cabbage, 1 cup of lettuce, 1 cup of mustard greens, several jalapeno peppers, and two shredded ramps and cover in the boiling grease, toss well, and serve with the bacon crumbled on top.
Think of it as a bulldozer for your colon. LOL
