Fudge brownies.
My wife looked sheepishly into my eyes and told me she wanted chocolate. Then while staring at her feet she asked me to make brownies.
Yes, I even bake brownies from scratch. a cup of butter, 3/4cup of unsweetened cocoa, 1-1/2 teaspoons of vanilla, three eggs (large), 1-1/2 cups of sugar, 3/4 cups of chopped walnuts and 3/4 cup of flour. Baked at 325F for 50 minutes in a 9x9 pan. You get 16 2x2x2" brownies that you only have to chew because of the walnuts.
Now I have 12 brownies left and she doesn't want dinner. I am going to have a hamburger patty wrapped in Black Forest smoked ham, topped with sharp cheddar with tomatoes and broccoli on the side.
 
Peanut butter and bread&butter pickle sammich with a side of pork&beans!

Hubby said you eat like we do.

We had onion rings, walnuts and slice of yesterdays pizza.
We eat several times a day hubby eats a lot of Pnut butter sandwiches. And he likes pnut butter with Nilla Vanilla Wafer's.
We eat all kinds of things olives,beets,pork and beans,etc..
 
I'm going to attempt to make Apricot chicken.
I say attempt because somehow I forgot to get apricot nectar but I managed to remember to put apricot halves in the shopping trolley!
You gotta wonder where my head's at sometimes.

I think I blend the apricot halves up with the light syrup and use that and use chicken stock if it needs more liquid.

Also I need to get a large flat screw driver and hammer if I want chicken.
I put a 2 kg bag of chicken legs in the freezer without breaking it down and packaging it into meal sized lots.
Rather than thaw the whole block and have to use them straight away I just chisel off a few legs off the side.

One of these days I'm going to stop doing dumb things that make my life difficult.

I don't know exactly when that'll be but I'm praying it'll be soon.
 
Steamed shrimp and fresh sweetcorn from the garden were made for each other... yummy.

Getting ready for the big blowout tomorrow.....BBQ wild hog, steaks, hot dogs, Angus Burgers, macaroni/potato salad, baked beans, gallons of ice cream, Banfi Lambrusco & Fosters for the adults, soft drinks for the kids, got a bunch of friends coming over and we'll start about 8 AM, go until 9- 10 PM, then Thursday the trek to the VA to bring a little cheer to the Vets stuck in the hospital over the holiday Let's not forget the Vets who are not able to get out and celebrate the 4th likwe the rest of us.

Lunch today was from small town place huge hamburger,bacon with huge order of homefries (included with the sandwich price) glass of tea.
Supper tonight will be what needs cleaned out used up before surgery.
Yep, you guessed it leftovers: lasgna, chicken breast stuffed with bacon, fresh spinach,ricotta cheese,mandrin oranges,
served over rice (homemade), peanut butter,tomato,onion sandwich,home made Supreme pizza made with homemade sauce,mexican cheese blend,jalapeno,
chicken shredded, sweet and sour shredded pork,pineapple bits,home grown herbs on home made pizza crust.
 
I have a Rack of Pork Ribs and Six Ears of Corn in the Smoker. I will also have a Macaroni Salad on the side. I rubbed the Ribs with a Whiskey, Maple Rub and Smoked them at 275 Degrees for Four Hours with Apple Wood Chips. This Saturday I will take the Pork Butt out of the Cure and Smoke it for Four or Five Hours at 200 degrees to make Buckboard Bacon. That will be Sliced thick and paired with Eggs and Toast for Sunday Breakfast.
