Greek chicken, asparagus, fruit, and Hawaiian rolls.
Thank you. I make a very similar salad, and it varies depending upon what I have available. I call it Southwestern salad or Southwestern corn salad. I use more corn and usually use frozen or fresh corn that I cut off the cob.Havent i posted this before? I dunno.
For my crowd I use 2 or 3 cans, but let's pretend it's only for 2 or 3 people who aren't big eaters. Ingredients vary.
1 can or 2 cups cooked, rinsed, drained, black beans
Optional can or half can of corn
1/4 of a red or green bell pepper
1/2 can black olives (or not)
Chopped tomatoes (I use the small or grape tomatoes)
Cucumbers (small ones, 1 or 2) cut however you want, peeled or not
1/2 avocado or less
Dressing: 1 lime, 1/4- 1/3 cup of extra virgin olive oil, fresh cilantro chopped (as much as you want)
I love this. I make another salad with garbanzo beans replacing the black, basil or dill replacing the cilantro.

It is great that they are doing that for your birthday.Kids are cooking. Barbeque ribs and brats. Salad, fruit, potato salad. Butter pecan cake with coconut pecan frosting.
