@Amish Heart was right, zucchini rolled in grated parmesan cheese and almond flour. Although sometimes we will also use sweet potatoes, which are of course not actually potatoes.

Ok that sounds good I may try that too.

Today will be leftover burgers ' on half bun' and turnip omelett. Turnip omeletts are delicious! Eggs ,turnip, onions and hot sauce. Soften turnips and onions in just enough eater to steam them then add butter and scrambled eggs.

I don't believe...someone else who likes zucchini fries!! You like fried eggplant, too?

We picked up some "ready to bake" pizzas from a local pizzeria that now features both an ultra-thin regular crust and a thin cauliflower crust. The wife and I are having gourmet vegetable add Canadian bacon and smoked bacon.

Tonight was grilled red snapper with baked potato, broccoli, and cheese bread. Wow!

Yesterday, my daughter cooked us a fantastic meal. Grilled chicken breasts and thighs, homemade hummus with roasted garlic, veges and olives to dip with, Mediterranean seasoned grilled vege kabobs, basmati rice, an exotic leafy salad with all kinds of great things in there, ciabatta table bread with seasoned olive oil for dipping. Chocolate cake for dessert. What a treat!

The night before, the daughter fixed grilled steaks, portabella mushrooms, tossed salad with avocado, and a Japanese sweet potato and onion saute. I never heard of Japanese sweet potatoes before, but they were different, and good! (normally I do not like sweet potatoes, but these were tasty) We went to our local Asian Market for those Japanese potatoes. There was stuff there that I had never seen before, including about 10 different kinds of sweet potatoes and a ton of other root-things. A great place to go if you want very different types of vegetables (not that I would know how to prepare any of them, but my daughter knows).

Getting excited about Christmas dinner.
I'm so grateful I brought a leg of lamb a few months ago for Christmas because prices are nuts at the moment.

I'll marinate it over night in a mixture of olive oil, lemon juice, honey, garlic, oregano and dried mint and put it in the slow cooker early Christmas morning.
Because it's so hot I'm having it wrapped in flat bread with a Greek chopped salad and a very sharp yoghurt dressing and extra squeeze of lemon juice.
The yoghurt and lemon cut the richness and fattiness of the lamb.
Desert will be cold mango slices from my own trees.
