Ok..thanks! I'll try that next time. Question..is the fish completely covered in oil in the fry pan or halfway?

Completely covered in my 2qt pot. When they float to the surface you know they are done. Same for wings. They sink when you first put them in. When they're cooked through they'll float.

I do something else for wings. I have a one pot type thing with a steam option. I steam the wings first till they're almost done. This cooks out the fat/grease. Then I drop them in the hot oil with no batter, only takes a couple or 3 minutes and they'll float. If you don't steam out the fat first the skin on the wings will never get crispy. Doing a 2 stage cook makes for yummy wings that are not greasy at all... nice and crispy skin.

Same principle when I cook thighs. I bake them almost done in the oven. Most of the fat under the skin cooks out. Then I drop them in hot oil for a couple minutes and fry them. Makes great thighs... and I don't have to bother with a batter.

Here's my wings....

Had my chemo this morning ... been vegging most of the day.

My Direct TV on my den TV no longer works, which is pissing me off mightily. Been calling for 2 days for assistance ... left 4 messages due to high call volumes. Found another number ... been on hold now for 10 minutes.

They don't know it yet, but they are history. As soon as I find a replacement, they are gone ... after less than 3 months!

Yesterday I called our big plumbing company to come look at our water heaters, because the hot water is coming out scalding hot. Had set an appointment for 3-5:00pm today. Well they called me at 2:30 and I did not hear the call because my phone was still on silent from chemo, so they CANCELED the appointment!!! I'm enraged. Called back and made another appointment for tomorrow. They too will be history as soon as they do the hot water tanks inspection/adjustment.

I no longer have a scintilla of patience with these companies any more.

we have nice neighbors, one of them is clearing our road with the bobcat. Going to give them some cash, even if they would do it for free and in the dark!! Didn't expect that. They must have seen us spend half an hour putting the chains on the truck on the way back

went to town to get the prescription filled , some other stuff and a load of wood
The wood is cut too large so son and husband are going to cut them all in half but oh well, it's what was available and on the way

Glad you have good neighbors, ours are always like that, and I try to help whenever I can, too.
Feed Store, pharmacy, $ Store. Talked to mil. Sil is in the hospital, so it's hard on her, she's 91...pretty old to drive an hr to sit with her daughter all day, but she does it.
Unloaded 15 of the 40 lb bags of the feed with little granddaughter. We each wagoned a load of wood up to the porch. Time to eat dinner!

Just woke from a nap and drinking coffee. Screw sleeping tonight. lol

Was kinda burnt and spent, and a little bummed that I'm over qualified for the job I applied for. I mean I'm 60 and they could easily prefer to give the job to a young lad with some experience and give him a chance for a promising career. Me? I'm approaching the end of my working career.

Y'all can keep your massages, I don't like strange people touching me! Anyhow, my job for today is rescheduled for Saturday. I'm taking Bear to the hike/bike trails for a several mile walk! Going to be a beautiful day, glad I can get him out to do something!! Got a list a mile long when I get home!

You're going to take a cat on a 'several mile walk'??? You can do that???

OK, now I'm guessing Bear is your dog? And I was thinking you were talking about a cat before.

Dang it, now I'm really confused.

Wild hogs in my garden just now!!!! The dog was in the yard, barked his ‘critter’ bark. I went out to check, maybe a deer or possum etc… Noooooo! I had a pack of wild hogs!!! Just as well I didn’t grab my rifle. They were so quick I wouldn’t have gotten off a shot after I put the light on them. Ballsy sob’s, might have to declare war on hogs for a few weeks! 🤬 They've never come this close to the house before... I see their tracks down in the bottoms sometimes but never around the barns or the house.

Please don't be discouraged. Look at it as a good experience to go through an interview and to sharpen your interviewing skills. People our age have a degree of maturity, well okay maybe sometimes, and hopefully knowledge and experience that can only be gained with age.

My mom something about hoping they're wise enough to hire me. If wisdom comes with age.... I got all the interviews beat. 😐

@OldSchool "They" say that one of the first things perspective employers do is find you on social media. I think that is true in a lot of situations, linked in and freak book at least. I hadn't been applying for jobs, last one was 4 years ago, then had one in October and realized afterwards that in the future I might need to do some fake interviews to brush up my responses. I've had a few friends look at my resume to get their opinions too. Good luck!!

Hogs multiply quickly, and they will be back in the garden! The ranch across the road from me has a monthly hog shoot at night! Before the place behind us sold, the previous owners got a total of 172 hogs over a 6 month period! They made a simple trap out of cattle panels. The hogs could push their way in, but not back out! Their numbers get crazy quickly, keep us posted!!

There's the coyote shoot going on here early tomorrow morning. It's a big deal out here. Land graphs are made, people ride in the back of open trucks, and assigned a section, out come the shotguns....I'll have to keep the dog put up till afternoon. It helps thin the coyote population out here.

wild hogs taste really good! We used to know a lot of people in Florida that hunted them

today it is actually supposed to get above freezing. Maybe we can open a few windows, sweep the floors and do a load of laundry . I might just fill up buckets and dump it in the washer. We need to wash towels. Those I don't want to do by hand
I hang my bathroom towel in the kitchen to dry and now it smells like smoke and food yuck. Only have 1 clean one left now

the road looks a little better but he couldn't get the ice off, too thick, oh well. Maybe it will melt some today. Or maybe we need to just dump hot water on it but not sure I have enough pots to heat enough water for the animals and that

Omg..that looks great! I've never fried chicken..I love it but just never done it. I'll have to try..

Short night tonight..I gotta get my weekend to do list going..
Warming up by my stovie is on that list too..
It's been beautiful out here the most of the last week n half or so..sunny clear ..cold..but sunny n clear.
The snow is patchy and very dehydrated..so it's more like frozen little ice patches ..everything is frozen ..it's been getting to the high 30's, for a few hours but not enough to really thaw much but a spot of mud here n there.
Up at the mill outside is frozen all day. The logs are frozen solid and we're tearing up saws alot. Supposedly were switching over to fir today, not as hard on saws in winter.
Gotta get ready..

Day 9 of the cold from hell.
I can speak above a whisper today (still broken but I can be understood)
Going to brave the grocery store early tomorrow morning (6am)
I'm always one of the first ones shopping on Saturday mornings and I'm home when other people are just getting up. Having another snow event on sunday and then after minus temps (woo-hoo  )
Little more energy today
