Duck eggs are back in the Butchers. Toinight we will be having Dippy Duck Eggs with seedy bread soldiers. Simple fare but oh so good.;)
 
Had spare ribs yesterday. It's my signature dish and they came out perfect.

Prepared the ribs saturday and rubbed em with dry rub:

1 tablespoon cumin
1 tablespoon paprika
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon chili powder
1 tablespoon brown sugar
2 tablespoons kosher salt
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon white pepper



Smoked for 6h in mesquite.

On the lowest rack in the smoker I put a tray with:

Cut up kelbasa,
Carrots,
Red potatos,
Onions,
Garlic,
Aspargus,
Little olive oil,
Salt n pepper,

I leave it all in there until the ribs are done.
All the meat juice drops into that pan and makes it delicioso!

I don't know what any of that is but it sounds good.....

I'll translate:)

Dippy= soft boiled
Seedy bread= wholegrain bread with mixed seeds
Soldiers= in this case toasted buttered bread cut into strips to 'dip' into the egg.

They were delicious, the yolks were nice and runny. I don't always get it right as I often overcook them.

In a few more weeks, local Asparagus will be in the shops, Can't beat it to dip into a Duck Egg.

I've started picking asparagus from the greenhouse allready. Not a lot, just 2 or 3 stalks at a time. Great stuff to just eat raw but even better with olive oil and mozzarella cheese drizzled on it and baked a little. Hadn't thought about dipping it in egg yoke before but sounds good.

Grill it a little first then dip into an egg, Heaven! Even better if you wrap the spears in bacon, then grill them and dip in an egg.

Everything's better wrapped in bacon, except your heart health.... :)
 
My kids were supposed to come down tonight for dinner so I made a pot of my famous (to me anyway) seafood chowder. I start with a large can of potato chowder then add some chunks of thick sliced bacon, a can of clams, some shrimp, crab, diced up roasted jalapenos and a couple large pinches of dried habanero's. And to top it off, a few dashe's of ghost pepper sauce. They didn't show up so now I have leftovers. Maybe they'll make it tomorrow.

I got lazy after working all day so got take out from Wendy's. I can't say I love fast food, but I really do like their chili.
 
i ate some beans n ham that i canned january of last year.still good as when i first made um.

You can't beat home canned.:)
I canned up some pulled pork last month, we had a jar yesterday, it was great! I filled a couple of jumbo rolls with the pork, coleslaw and salad.
 
I hope everyone here had as good a meal as we did. I love holidays and like to make a big spread. Ham, sweet potatoes, augraten potatoes, green beans and potatoes, asparagus with mozzarella cheese, rolls and corn on the cob. Most of the stuff was home grown and canned from the pantry, which makes it more appreciated by me. Anyways, the ham is sliced and in baggies for the fridge and freezer, the dishwasher is running and I have a big pot of ham fat and bone simmering for canning later on tonight. I like to make ham broth for cooking noodles later on or bean soup. I just hope everyone had a good day and goes to bed with a full belly. It's easy to get caught up in all the craziness of life and to forget what's really important to be thankful for.
 
Over here, Lamb is tradionally served at easter celebrations and our house was no exception. The butcher boned out a chump end of leg for me. I served it with roast potatoes, cauliflower cheese, roast parsnips, peas, yorkshire pudding and lots of gravy. We had lemon meringue pie for dessert.
The leftovers will make a great shepherds pie for dinner tonight.
 
I got two thick rib eyes on the grill right now, a large dish of homegrown sliced red potatoes with ham and onion in a cheese sauce, and a French bread loaf with butter, garlic and mozzarella cheese on it. The steaks are half way done and the bread is just about to go in the oven. I'm so hungry right now from the smells that I'm thinking really rare steak!
I hope everyone else is having a good meal out there tonight too.
 
On day 3 of no power from Irma, took out some chicken breasts to thaw, then grilled them up with some mesquite sauce (McCormick), and served over chicken pasta (those Knorr sides). Was damn yummy. No power doesn't have to mean no taste...LOL.

On day 1 of no power, I had already crocked some mojo pork just before the storm, so just had to heat that up on the grill (pork loin in mojo sauce with sliced onions, served over yellow rice).

On day 2 of no power, had also already crocked some chicken stew, so just reheated that on the grill.

Still have quite a bit of stuff in the freezer and fridge, all still cold (frozen stuff still even frozen), 70 plus hrs after losing power!!! The trick is...before the storm, we froze a LOT of water bottles in the standing freezer. When the power went, we then chucked them all in the fridge and freezer, to keep it all cold. I'm amazed it lasted this long, but damn!
 
Glad to hear from you Gaz, as well as the storm not kicking your butt too bad. I just got internet back today, and had no power or phone for four days. I cycled the generator on at least three times a day to keep the fridge and freezer cold, and was able to take hot showers here so it wasn't so bad. Hardest part was not having a computer for the business, and the lack of cell reception. Anyways, life getting back to normal and no damage to any structures here at least. Ate a lot during the down time.....
 
Chilean Sea Bass, salt and pepper then lightly floured and pan seared in butter and olive oil. Topped with Marsala wine reduction sauce with capers. Sauteed sugar snap peas and mushrooms. All on a bed of white rice. (to soak up the sauce and mushroom gravy)

And if you think it sounds good, you have no idea...it taste's even better than it sounds.

Found the recipe online and it's really simple. The hardest part is finding fresh Chilean Sea Bass, LOL

I saw a documentary that said 80% of all the fish bought in stores is mislabeled, so unless you take a fishing vacation and catch it yourself, or check its passport, just enjoy the fish.... :)
