Do you make the mu shu pancakes or skins, from scratch? I always wanted to learn to do that! It has been a very long time since I've had mu shu, too long!
I have made the pancakes before — and they’re really not too hard, you should try it! — but since my husband can’t have gluten these days (it wreaks havoc on his diabetes), we usually settle for gluten-free tortillas. I’m eating up the last of our frozen sourdough tortillas. -quiet weeping when they’re all gone-
 
I haven’t, no. It’s definitely on my list of things I’d like to learn.
Grow them, its easy and all you need is an old fish tank and some love.

Daughter has celiac, but she is a grown up now and lives on her own. I wonder if anyone has ever made them with gluten free flour?
 
I went hunting morels and ramps on Lookout mtn last month. It was too early for morels. The ramps were on the other side of a creek... after 4" of rain, so no ramps either. There were none here on the farm when I got home, haven't see a single one.

I'm keeping my eye open for Chanterelles. Our nights are still a touch cool I think. Supposed to be 85 by the weekend... chanterelles are over due. Maybe!

Left town yesterday to late to cook dinner so I picked up a large bbq sandwich, only ate half. Guess whats for dinner tonight! The other half.
 
Daughter has celiac, but she is a grown up now and lives on her own. I wonder if anyone has ever made them with gluten free flour?
Yes my aunt used to buy king Arthur gluten free flour at Kroger, they were a bit of a more yellow color, but that might have been those big brown eggs we had. anyway, they were delicious. I think it was buckwheat and something mixed.

I’d check Nom Nom Paleo, that seems to be where I find most of the non-gluten Asian goodies. But I haven’t looked there yet. Gluten-free baking is something I’m very slowly experimenting with, but it is hard. Usually it needs to be done with a combination of flours and starches, and I haven’t learned all their properties yet. My husband seems to do better with the paleo starches, which are even more obscure and expensive than the standard gluten-free starches, so it’s been difficult to source and intimidating to experiment with. But we’re getting there slowly. I made some paleo potstickers and those turned out pretty well, if a bit heavier than norrmal potstickers.

Edited to add: unfortunately most of those are gluten-free mu shu but not gluten free pancakes. Alas. ):

Edited again to add: These look like functional paleo (gluten free, grain free) tortillas. I think I would do the trick where you brush one side with sesame oil, I think that’s part of what makes mu shu pancakes taste like mu shu pancakes, rather than like tortillas.

I guess as you learn all the tricks it gets easier! At least there are a lot more resources for gluten free cooking and baking!
 
I have been experimenting with Thai Curry recipes.
The restaurants are better of course but mine's not bad.
Still a works in progress.
Where I live if you want something other than Mexican, Chinese, or fast food you have to make it yourself.

My family says mine is better than at a restaurant but yeah we don't have anything around here either as far as restaurants go , not even good pizza

here is my recipe, it's really easy and good
1 can of coconut milk
3 tbsp of red curry paste ( the small jars they sell everywhere)
2 tbsp of chili garlic sauce
fish sauce
basil
a little salt
cut up 2 large chicken breasts into thin slices and put in the above sauce and cook until almost done
add 1 cut up red pepper
1 small can of bamboo shoots
and 1 can of pineapple ( drain)

this goes with jasmine rice

Roast beef burritos

I bought a few cans of roast beef last year, been eyeballing them, wondering how to use them. One kind is packed in beef broth, the other in gravy.

Have you used canned roast beef in burritos or is it a different source?

Fried a batch of wings last night. Haven't decided on tonight's dinner, trying to use up old meat from the freezer, might go with spaghetti.
 
You can use canned beef for burritos or tacos. Another way to use canned beef with storage stuff....
put in a baking pan some canned meat, make some stove top stuffing and put that on the meat, pour a little gravy over it, make some instant mashed potatoes and put on top of it. Bake it at 350 for 20 minutes. Doesn't taste too "storage foodie"
