I pan fried a couple burgers last night. Didn't want another burger tonight so I diced up a cup of bell pepper and onion and sweated them down in butter. Just a little salt and fresh cracked pepper, spread it over a patty.

I opened my favorite canned peas. I gave them a splash of pepper sauce, hey, this is the south. A good dinner.

We had leftover German lentil soup, but after three rounds of it I was tired of just lentil soup, so I made some chimichurri to drizzle on top. Everything tastes better with chimichurri on it. Also had a big green salad — spring mix, tomatoes, carrots, celery, red onion, eggplant sott’olio, and avocado, with lemon-olive oil vinaigrette.
 
Dinner will be sliced pork butt and sweet corn, stopped at my favorite produce stand today.

Lunch was at the 2nd best chinese food place in the big town, good as always. It’s also the only asian market in town. Needed a few items from the store.

Funny, they had a new yogurt product. The name was “Ambp…. Greek Flavored Yogurt”. I was laughing because the only greek I know is hairy and sweats a lot. (strange sense of humor, I know)

I think it’s the chinese version of the new yogurt smoothie drinks. Didn’t buy any, it was sitting on the floor and had been marked down twice.

One of my favorite meals, catfish fillet, sweetcorn and watermelon for dessert.

Usually don't buy melons this early but took a chance at the little produce stand yesterday. They get good melons most of the time. This one wasn't too bad. Thumped a dozen before I chose it, had pollen scars too. When I cut it I saw it'd gotten a little too much rain while growing, probably a FL melon. Not enough to ruin it but I could taste it.

My family says mine is better than at a restaurant but yeah we don't have anything around here either as far as restaurants go , not even good pizza

here is my recipe, it's really easy and good
1 can of coconut milk
3 tbsp of red curry paste ( the small jars they sell everywhere)
2 tbsp of chili garlic sauce
fish sauce
basil
a little salt
cut up 2 large chicken breasts into thin slices and put in the above sauce and cook until almost done
add 1 cut up red pepper
1 small can of bamboo shoots
and 1 can of pineapple ( drain)

this goes with jasmine rice
This sounds really delicious. Canned coconut milk is a good thing to keep stocked for curries. I also keep bamboo shoots and pineapple. Not in this recipe, but water chestnuts are a good Asian food to prep, in addition to all the spices and sauces. And this is another meal that uses rice.

I know that fresh chicken would be best, but I wonder about using canned chicken in this recipe. I think I will try it soon.
 
Very simple: mayo with a splash of milk and rice vinegar, salt, pepper, pinch of sugar. Mix it all together, easy done.
I'm going to try this when my current bottle of blue cheese dressing runs out. I've been on a green salad kick lately.
I have powdered blue cheese. I love blue cheese dressing and I've been trying to come up with a recipe that could use my powdered blue cheese to make it.
