Most likely chicken fajitas!
Really good meals today! My daughter is visiting from Hawaii.
Lunch was at a sushi restaurant. I don't know if the various sushi rolls are named the same all over the country or if they are local, but we had a Hawaiian Roll, a Green Monster, and a Punk Lady. Also an order of chicken fried rice. Everything was really good.
For dinner my daughter whipped up something that I don't know the name for. Some popular Puerto Rican dish. The main mix was browned hamburger meat mixed with sauteed onions and pablano peppers. Lots of seasonings, but I can only guess what all she put in there. She found some kind of "garlic grass" ? growing in our garden and put that in there. Cummin, nutmeg, fresh cilantro, cloves - I don't know what else. That meat mixture was served on top of fried and smashed plantains mixed with cassava flour. Topped with some habanero hot sauce. As sides we had a roasted Stokes sweet potatoe and a simple salad of butter lettuce, tomatoes, and avocado. Fantastic dinner! I don't know how my daughter learned how to cook so well - we didn't teach her.

I grilled thick cut bbq pork chops for dinner and for dessert we had hot pecan sticky buns and Ice cream.
We had left over roast the wife seasoned up and bar b q'd it with onions and peppers. We then put that on tortillas with some cheese and sour cream.

I would die for that dinner right now! But we'll be having leftovers shortly...
We have been working too much lately and haven't really been able to sit down at the table and have dinner together for a week. It was nice evening.

We had chicken sandwiches, a fruit salad, coleslaw, and baked acorn squash
I made hamburger steaks with onion gravy, mashed potatoes, corn on the cob, and garlic bread! No room for dessert! Of course big glasses of milk!!
Abusing one of my Roman cookbooks to make patina Apiciana, which is basically a bunch of leftovers tossed into a wine-and-egg sauce and ladled over flatbread. I have some oat tortillas I made that turned out way too crumbly, so this should work to eat them up, along with the ham, chicken, salmon, and mushrooms I have leftover from the last week. Sounds weird, tastes faboo. I do cut down the wine in the recipe or it is really strong.

Boneless pork ribs cut into chunks. Sautéed in olive oil along with some coconut amino, mushrooms, chunked sweet peppers and chunked vidalia onion.

Polk salad, dipped in egg and corn meal with ravioli and a beef stick.

Quite a variety
Ima gonna have to remember that, that does sound good and we do have left over roast from time to time.
I dont think you'll be disappointed. You can doctor them up to what flavors you like best. I know at times she has put chili powder, cumin, and garlic in the meat mix
Chili dogs, yum! Don’t remember the last time I had one. Made a chopped veggie salad to go with — cucumber, jicama, tomato, green onion, peperoncini. Good stuff.

I made a pork loin roast in the 6 qt Instant Pot. I seared it first. In the 3 qt Instant Pot I made potatoes and carrots. I made a pretty tasty gravy from the juice in the pork roast instant pot. All preceded by a very veggie salad with artichoke hearts, baby corn, etc in it.
Grilled cheese, chips and pears!
Got back from a road trip and popped a Marie Calendars chicken pot pie in the oven. Tasty quick food, easy on my stomach.
We had Manwich with curly fries , quick and easy. My daughter has her graduation tomorrow so it was something fast tonight, we will go somewhere nice tomorrow for supper. My baby girl is growing up way too fast, starts CLEMSON in the fall taking AG ED. we are so proud of her as she has finished high school with a 4.834 GPA.
