Tonight it is................. kielbasa, taters and vidalia onions. Mmmm.....mmm............good!

Since we didn't get invited to Kielbasa and Taters, I had chili spaghetti, with cheese , crackers and hot sauce.
 
Just macked a dee-licious green chile & beef barbacoa burrito (using seared tri-tip roast), best burrito of that kind I've had in ages, lol. I chunked up the seared beef, grilled jalapenos & onion, tossed it all on a fresh flour Albuquerque Tortilla (nuked with heaps of shredded cheese), added Hatch Green Chile Sauce inside and sour cream on top, and MAN, OH MAN, that burrito was GOOD!!! Best of all, I have plenty of leftovers, so I may have another bad boy beef barbacoa burrito tonight, lol, perhaps adding fresh avocado (which I didn't bother using this time, even though I have some). Didn't wanna get too loaded down right now, so I just had the one burrito without avocado... it was still damned delicious!!! :)

I should try to take a photo next time, maybe I can do that tonight, but I was so hungry and this burrito smelled so good that I devoured it in record time, lol. I did snap a couple shots of the Hatch Green Chile Sauce, Young Guns brand, lol... gotta get the 'X-Hot' kind, and of course I already had grilled jalapenos to add to the beef. Those jalapenos were probably grown here in NM as well, in Hatch or near Deming. They're pretty tasty too, especially when grilled... nice flavor, aye? Not stupid hot either, but hot enough to make ya sweat as ya eat your burrito plate, lol. Man, I'm a happy camper right now, I'm debating whether to lie down and read a book or watch a library DVD, lol. Time will tell... CHEERS!!! :cool:

Last night was a stoffers frozen dinner, meatloaf. I had screwed up my hot n sour soup badly. It was to hot to eat so I dumped out the whole pot. Worst part… it was my recipe, not from a book. :mad:

Still in the mood for asian so tonight I made shrimp fried rice from scratch, dumplings were frozen. Yummy!

I stop by the Sonic drive-in just for their tater tots, 3 or 4 times a year at least. Their milk shakes aren't bad either.

I sometimes by a bag of frozen tots, need to get another. My "fry daddy" ran hot, close to 400*. Didn't do tots very well. I use a #8 cast iron camp stove for deep frying now. It's so much better, holds heat. More stable frying and my gas stove makes it easy to be precise.

Darn! now yall got me thinking about tots!

No plans for the evening but making a batch of wings for dinner. Contemplating making fries since the oil will be hot.

Wife can't cook right now, or much else. She broke her right hand. Did I mention she is VERY right handed. Normally she is a VERY GOOD cook. Not much she's tried since we got married that didn't turn out good.

Tonight I made chicken fajitas. She said they were pretty good.
 
Taco night, all the fixin's!! I had taco meat already cooked, so for lunch/snack I made a little plate of nachos. A few tortilla chips, taco meat, cheese, green chili's, and, get ready to be grossed out, a little butter!;😮 Don't know what possessed me, it was good!! So if I disappear, the nachos killed me!!!🤪🧈
 
I still have some leftover burrito mix, but I also have this weird hankering for some of those beer-battered fish fillets with tartar sauce! I know, it ain't health food, but I haven't had those fillets in so long, I think I'll cook some up tonight. Dunno why, but I have a craving for tartar sauce... saw some at the store the other day and bagged it along with the fillets, lol. I'll make a nice green salad to offset the battered fish, lol. Here in the high desert, we don't have much of a fresh seafood selection in the stores, so it's the frozen stuff tonight... maybe a cold beer first. ;)

On a historical note, some of the best fish & chips I ever ate came out of a pub in England... good & greasy, served in an old newspaper, lol. I think it was a newspaper, maybe it was some other kind of paper, but that fish and those chips sure were tasty! That was so long ago (1979) that I can't rightly recall the wrapper, but the meal was delicious! :cool:

  • Beef filet mignon
  • baked potato (topped with onions & garlic cooked in butter)
  • farm fresh tomato slices (topped with sliced mozarella, basil leaves and balsamic vinegar sauce)
  • simple fresh pineapple for desert.
Wow! And, all due to some mistakes.

The steaks...not a typical Monday night meal, but our freezer didn't get closed all the way, and my wife has been cooking everything in there that partially thawed, and she decided it was steak night...we had to "get rid of them." Steak was medium rare off the grill...deep red-to-purple, but warm center. Perfect for me! Medium for the rest of the family.

Baked potatoes...I've never been much of a potato guy, but now, when the wife makes baked potatoes, I slice some onion and put it in a bowl with some minced garlic (just from a jar) and an inch of butter, and I microwave it. Very easy...I'm not a gourmet chef myself...but it's like I'm at a famous steakhouse, and paid extra for the toppings.

I had picked up the tomatoes from a farm nearby last Friday, and they also had to be eaten...and the wife perfected them with her toppings.

I saw the perfect meal coming, so I opened a bottle of my most expensive wine...totally by mistake. I thought I was opening a cheaper bottle...but, at end of the night, no regrets! ... even on a Monday night.

This was a totally crazy meal...perfect for a major anniversary or celebration, and we had it on a Monday night for no reason at all...frankly, because mistakes were made (freezer...wrong wine).

Maybe it is a pre-celebration for us winning the lottery tomorrow night. 😁

And, as if you couldn't tell, I probably had an extra glass of the wine...and why not? :)

We had Bacon and tomato sandwiches, with fries. Best I could do after a long day.
