A friend of mine butchered some Cornish Cross Chickens he raised he brought us 3 of them. You forget how much better a farm raised chicken is. Alexandra is already talking about me building her a brooder house.

Yes they are!! I cooked part of one yesterday. This one is huge so it will make several meals. Yesterday I cut off legs , wings and some breast piece and made fried chicken. I am not that great at making typical American food so this is something I don't do often but it turned out fairly good. I fried it in lard and then put it in the oven to finish. I take the skin off the chickens ( it's tough) so the coating didn't stick too well

Today I will make chicken and dumplings with the rest, will take photos since someone here asked recently about dumplings. This I do know how to make
 
Tonight was chili night. But not the good stuff. Because my wife is having to work this evening, I'm on my own. So a can of chili is what I ate. It wasn't as bad as I remembered it being.

Shortly thereafter, I started looking for a dessert. Nothing! I have been up to the kitchen at least five times over the last few hours, checking to see if a dessert might have been overlooked or otherwise magically appeared. Nope! Not even a stale Chinese fortune cookie still on the counter from the last take-out. :(

And then I saw it! A box of brownie mix hiding in the back of the cabinet. Yep - got the eggs. Got the vegetable oil. Got the water. HooBoy! I don't care that it was 9:30 when I discovered this. Into the oven they went. As I type this, I am anxiously awaiting the 45 minute timer to go off. The hard part will be waiting for them to cool before cutting them. I checked, and it's 16 degrees outside. That should speed up the cooling process a little. But I just now thought, "Hey, if I eat the whole pan, technically, I don't have to cut them!" Now THAT would really speed things up!!! :D

Just grab a spoon. No need to dirty a knife.

We had smoked pork chops, Spaghetti Squash, and stove top stuffing
 
Made a soup with the leftover roast and lots of vegetables last night, and did the take and bake pizza the bus driver brought for little granddaughter. Had salad, too.
Tonight is chili at my favorite cousin's house. I need to make something to bring, so maybe scalloped potatoes. Looking forward to it...it's been 4 weeks since we've had Sunday dinner with her, but husband said he thinks he can make it tonight.
 
This was weird for me, so figured I'd post it:
  1. Bed of lettuce (mixed leaf types...something my wife bought)
  2. Topped with chicken fajita leftovers (cold, straight from fridge...mostly chicken meat, sauteed onions & peppers...very lightly seasoned, mostly just a roasted flavor), and
  3. a little red wine vinaigrette to give it some salad-like zing.
Yeah...sounds weird. But, it actually worked. And, (perhaps) more healthy than my other option, a frozen pizza.

I've been trying not to drink during the week, but this called for a half glass of Rioja wine to finish.

That's not weird, we do a lot of leftover fajita salads. Very good eating!!
