Another turkey plate, I just can't get enough of it, lol. This morning, I put thick slices of turkey atop a delicious bakery roll (open face), covered both halves with gravy and reheated it... put some cranberry sauce on the side, and that plate was awesome! Really hit the spot, and I wound up taking a nap today rather than making a town run, which is fine because the restorative qualities of food & sleep made me feel good when I woke. I only have two beers left in the fridge, and I just cracked the first one, but I'm not in a big beer-drinking mood today, I'm letting my body recover from recent bike rides and activity on the home front. Tonight, I think I'll make some 'Jalapeno & Cheddar' pasta and toss in chunks of turkey, a small green salad on the side... I'm mixing it up with this big ol' bird, lots of turkey to work through in days ahead! I'll make my store run tomorrow, this is 'restorative feast day!' Boy, that nap really helped too... guess I was more tired than I thought, lol.

Do a turkey pizza! buy one of those stupid vegan pizzas, shred your bird on top, give it a cup of spaghetti sauce, slather it in Mozzarella and mushroom bits.

Ok, so yesterday we went shopping and I really didn't have time to cook. I also didn't want to get overpriced junk food, so I did something I have never done: I bought 2 frozen pizzas. Yes people, I have NEVER had a frozen pizza. Husband laughed, but then I asked him if HE ever had one, and he doesn't think he did either ( we have been married 24 years) . I got 2 different kinds, one with pepperoni, one with ham and pineapple. The pineapple one was barely tolerable, the pepperoni one not at all. Way too greasy and salty, not enough cheese, crust was hard as a rock ( I followed the heating instructions exactly) . People eat these things on a regular basis? I remember the shelves being empty before a year ago or so....

I've a full day ahead, so going to make a fry and leave it for the troops to have later as they come in. We've loads of eggs, they can cook them as needed- but sausages, rashers (bacon) and white pudding and fried mushrooms are on the menu. I'm also away tomorrow at a symposium, so I'm leaving a beef sausage pasta bake in the slow cooker for them- it'll be lovely when I come in late to have something warm with garlic bread.

I made this last night, and I thought it was pretty good. I'm not sure if my wife tried it, but I would definitely make it again just for me. Pretty simple. Not too many ingredients. Took about 30 minutes to put together, and 40 minutes in the oven.

Have you tried Doritos Cheesy Chicken? It's similar but not quite the same.

We had tuna casserole last night.

I have not, but it sounds good. Do you have a recipe or a link? I would like to try it.

Red lentil soup. This has become my favorite. It doesn't matter what color your lentils since it ends up red from the added tomatoes and curry mixture.

Add a tablespoon of olive oil to 5 qt pan with lid over med heat. Add your choice of fresh veggies on hand. My last batch was carrots, bell pepper and broccoli. Heat couple of minutes until veggies start to tender.

Add one cup lentils and half cup split peas. Add 14.5 oz can of diced tomatoes. Fill with water to an inch below top of pan.

In a bowl, mix your "shoot from the hip curry": 1/2 tsp of cumin + dashes of turmeric and ginger until it starts looking like a curry? Add to the pan.

Bring to boil then cover and reduce heat to simmer for an hour. Add 1 1/2 tsp garlic salt, 1/4 tsp black pepper and 2 Tbsp of apple cider vinegar. Enjoy!

Homemade turkey soup with large chunks of turkey and fresh veggies! Celery, onion & baby carrots, seasoning, pasta, and some crusty toasted French or Italian bread with real butter on the side! My soup is a meal in itself, but I might make a small cucumber & tomato salad as well, I noticed those in the fridge and I need to use 'em up and clear space. ;)
