Made dinner early for a change, small baked chicken pieces, and guacamole and corn chips. Had to, the avocados were going the way of the world. My foods don't always match. Such as, I enjoy chili on top of leftover mashed taters, don't always have rice with chili.
 
I am drooling looking at the food pic Hashbrown posted.

Pearl, that sounds delicious.

Mom had yellow rice and boneless skinless chicken thighs. I'm about to have some cauliflower bacon cheddar bites. although, I'm thinking of making some vegetable stir fry rice for the first time. I can add in some frozen veggies and eggs to the rice.
 
I have totally injured myself on lunch, and that was the first round. Our little last minute Thanksgiving lunch went off perfectly.

Holy Mackerel!!! HB, that's a good-looking spread, and I like the apron too, lol. Moi, I'm cooking this big ol' bird for dinner, I'm over halfway through with the job, as I got a late start and didn't put the bird into the oven till noon, but that's okay, the cats & I aren't hungry yet after snacking & sampling some goodies, lol. We'll be mackin' turkey for a week with this big ol' bird!!! :oops:
 
If it could go wrong it did go wrong yesterday. The turkey was still fozen. It took a couple hours for me to get the plastic thing out of it. The neck stubbornly refused to come out, even with cooking the bird for a while. Instead of stuffing we had dressing on the side. Normally I cook the cranberries early in the morning so they have time to chill. I forgot. They boiled over.

In the end though we did have a nice meal. Turkey, dressing, mashed potatoes and gravy, homemade rolls, cranberries, corn, and veggie sticks with dip.

@Shawn Burkett what plastic thing? My son bought a turkey that also had what I thought was a plastic thing in it, holding the legs together. I have removed it from other turkeys but yesterday I actually read the outside packaging (;):D) which informed me it is made out of nylon and will not melt. Left it in, baked the turkey, no melting, great turkey.
At least the oven works! Sorry you had a stressful day.

At least the oven worked and at the end of the day, you had a nice meal even though it didn't go according to plan.

Back in 2008, I bought a new stove the week before Christmas. The second time I used the oven was for Christmas dinner. I got the turkey stuffed and in the oven right on time.

Everything was going great until I checked on how the turkey was doing.

The oven door would not open. We tried everything. We had to turn off the oven and with no repairman available until after New Years, the whole stove had to be moved outside to keep that bird from rotting and stinking up the house.

Turns out the temperature control thought it was on self clean and went on permanent lock down.
 
This is a new stove too. It cooks hotter then my old beat up stove. I tried the self clean thing once. It takes hours to go through the whole procedure. And it does lock down until it's over.


Yes I'm grateful the meal turned out pretty good considering. The dressing on the side was no big deal. There wasn't any leftover for the next day.

You'll use it enough by Christmas so everything should go smoothly!!
 
Also, two oven thermometers are good to see if your new oven needs to be calibrated.

I use them in the old wreck I have now because it doesn't get hot enough. I have the corrected settings on the pin board in the kitchen.

I have a new propane stove waiting in the back room but I ran out of time to run the propane line this fall.
 
Had a can of generic, store brand chicken noodle soup, with a 5 oz can of canned chicken added to it so there would actually be some meat in it. The canned chicken flavor was definitely different from the soup. Next time I think I'll cook a breast and chunk it up and add that instead. As it was, that can of soup went from 7g of protein, to 30g when I added the canned meat...

Big ole burritos!! Assemble your own "burrito bar"!! Had turkey for breakfast and lunch, time for a break here too!!
I like doing that "assemble your own" with baked potatoes. We used to do that potluck style, one person provided the potatoes, everyone else brought all the other stuff to put on them and you made them to suit yourself. As long as there's chili, that's one of the better meals a person can have...
 
Hashbrown, that all looks delicious. I love your cabinets! Raised panel cathedral style are my favorite cabinet doors.

I had grilled chicken sandwiches from Wendy's for dinner and some cinnamon & spice oatmeal for breakfast. I had to leave a few spoons of oatmeal for the dog because she LOVES oatmeal and was about to lose her mind watching me eat it. LOL. I always save her a bite of stuff (or if I forget I take a little food out of my mouth and give it to her-- she gets sad and pouts if I don't). She's good at cleaning bowls and plates-- although the other dog does a better job of it.
 
Another turkey plate, I just can't get enough of it, lol. This morning, I put thick slices of turkey atop a delicious bakery roll (open face), covered both halves with gravy and reheated it... put some cranberry sauce on the side, and that plate was awesome! Really hit the spot, and I wound up taking a nap today rather than making a town run, which is fine because the restorative qualities of food & sleep made me feel good when I woke. I only have two beers left in the fridge, and I just cracked the first one, but I'm not in a big beer-drinking mood today, I'm letting my body recover from recent bike rides and activity on the home front. Tonight, I think I'll make some 'Jalapeno & Cheddar' pasta and toss in chunks of turkey, a small green salad on the side... I'm mixing it up with this big ol' bird, lots of turkey to work through in days ahead! I'll make my store run tomorrow, this is 'restorative feast day!' Boy, that nap really helped too... guess I was more tired than I thought, lol. :rolleyes:
