We drove up to Ozark Missouri for lunch today. We decided to have lunch at The Mill it’s a Bass Pro property. We had a Bloody Mary and started with the Risotto Fritters and I had the catfish. I rarely have fried fish anywhere but home I’m particular about how I like fish cooked. It was ok at best and I fed most of it to the chickens when we got home. I did enjoy the time with Alexandra and the view from our table. I could teach them a thing or two about cooking good catfish though.

I tried this recipe last night and it was not bad. I will definitely make it again. I also found a side benefit for dessert, which was not bad. Since I was only cooking for two, I cut the recipe in half. No problem using one can of chili and four hot dogs, but what do you do with the other four crescent rolls? I spread Nutella on them and baked everything at the same time. My wife liked it, so it was a hit. Who knew? An experiment that turned out O.K.

Baked the tots just short of finished. browned the burger, onion, and taco seasoning. Drained well, then dumped it over the tots. Covered in mexican blend shredded cheese. Back in the oven for 5 minutes to melt the cheese.
Topped with sour cream and salsa after plating it up. It was good, but a little too dry for me.

Pro tip: put just a little cream of mushroom, or chicken, or celery soup, in the meat before you put it on the tots. Not enough to make it runny, but enough to moisten it up.
