@sonya123 I use alton browns wing process. I steam them first in a multi-pot. Cooked about 1/2 done, just long enough to melt the fat which drips out. Then I deep fry them, right out of the steamer into the oil. Skin comes out nice and crispy, no fatty bits inside either. I set my multipot for 8min. Takes 9min to heat my oil to 350dg so I start both at the same time. I can cook a dozen wings in about 15min.

Waiting for the call from my neighbor. He'll finish butchering my calf around noon. Might have to buy another freezer to hold all the meat. Have to play today by ear...
 
My wings are turkey size and the skin is like rubber so skinning them is necessary. Because they are so big its easy enough to do. I marinate them for two days in a honey, ketchup, dark soy, garlic, sesame oil sauce and bake them low and slow until the sauce is reduced to nothing but finger licking gooyniss.

Small wings are marinated for longer, skins on.
 
There wasn't a lot of excess fat on my bull this time of year... My neighbor noticed when he processed the meat, commented on it.

So I made burgers tonight, just to see how it cooks. Burgers were fine, nice and juicy. Didn't even use bacon grease on them. They may not be 80/20 but they were yummy.
 
Baked chicken & rice, a "comfort food" since childhood... only this time, I used some Zatarain's Cilantro & Lime Rice, just to try it. I actually mixed more white rice in with the two boxes of Zatarain's, since I'm making a large batch of chicken & rice... leftovers! Chicken & rice is the very first "comfort food" I can remember from my youth, it was cheap & easy for me dear departed mum to make, and my pop (retired submarine commander) didn't take such a hit to the wallet in feeding 9 kids, lol. Pan just went into the oven 15 minutes ago, I'll have a small side salad with the main course once it's ready... gotta love chicken & rice, it's nutritious and filling, never fails to satisfy my hunger, aye? :D
 
tonight was dine out night, last night wife did kelbasa sausage, she is an awesome cook, my girth can attest ha, i did introduce the family to shrimp, clams, and other seafood, my wife prepares burgers and i do the grilling but she does 99% of all the cooking...jacks pizza have their place too Spike, i like them, and red baron. heck ok i like every pizza almost

I remember that show!! I was born in '68 so I probably didn't pay that much attention to it. Thanks for 'splaining!!
